We all know that a good breakfast starts with a delicious arepa, but what better way to give it a new twist than by pairing it with vegetables? In this case, I wanted to try the famous pumpkin arepas—a unique blend with a different color, aroma, and, of course, flavor. Lately, while trying out different recipes, I’ve started creating these dishes; honestly, I do it for two reasons: to stick to my diet and to learn how to prepare healthy recipes so I can share them.
